The Saratoga Steak is a cut unique to Gourmet South Meat Market, coming from only 100% Black Angus Cattle, an area near the shoulder of the cow and inside the area known as the Rib Cap. Upper one third choice, Wet aged for 28 to 30 days, this incredibly flavorful steak averages about nine ounces in weight and is a smaller cut than the traditional "side-of-beef-on-a-plate" items such as a Porterhouse or the larger Ribeye. Straight forward and versatile, this cut deserves your serious attention, and after all that hard work making dinner? You deserve it as well!
Talk about necessity being the mother of invention! The Saratoga Ribeye is the perfect example; and one with a really happy ending. It’s a byproduct from the production of the Rib Cap (and the tastiest thing ever to be associated with the term ‘byproduct’); and originally was not unique because its size was very similar to a normal Ribeye Steak.
The Saratoga Ribeye is, simply put, the heart of the Ribeye Steak. A star is born! I think that this cut might drive the Filet Mignon out of business... To give you a little more description of it, once the Rib Cap is removed, what is left is the heart of the Ribeye steak. After perfectly hand trimmed the result is a perfect and compact steak that delivers the flavor of its big brother without the extra baggage. Much of the allure of the Filet Mignon is that you can get a nice thick cut without having a huge portion…now there is an alternative. Particularly when the meal is a multi course affair, a diminutive entrée option is a fantastic alternative to consider.

Our Fresh Beef Is Guaranteed Fresh In Your Fridge For Two Weeks!
Since it's never been frozen, if you do not use the beef within the two week period, simply freeze it and its shelf life at that point is one year in the freezer! Our Seafood comes in 6 days a week and has a 7 day shelf life in the fridge as well as our fresh poultry which has a 7 - 10 day shelf life. If you don't use it within that time, freeze it, it will be good for up to one year!
This is my new favorite place! My husband and I stopped in the other week to check it out and they have so much great stuff!! And to make things even better, customer service was excellent. The owner Jim took the time to show us around and describe all the products he carried and patiently answered our questions. You can see clearly he takes pride in his products and the superb quality. We bought several items, I have tried the salmon I purchased and it was wonderful! Great quality and better than anywhere else I have purchased here in Fort Mill.
